Spicy Korean Chicken & Potato Stew

Comfort food at it's finest! I was craving this dish after I saw it on Instagram Stories and knew I had to give it a shot at recreating this recipe. And I'm so happy to say, that I love how it turned out! I hope you'll like it too if you end up making this recipe! :)


Recipe

ingredients

2 pounds of chicken drumsticks

1 1/3 cups water

1/2 cup soy sauce

2 tablespoons gochujang

2 tablespoons brown sugar

7 cloves of garlic minced

1 yellow onion chop into 1-inch squares

1 medium carrot or 1 bag of small carrots cut into 1-inch chunks

1 lb of baby dutch yellow potatoes cut in half

1 tablespoon of sesame oil

1/2 cup of diced green onion for garnish (feel free to add a bunch if you like it!)

white rice (make as much as you need)

prep work + cooking instructions

  • Boil a pot of water and add your chicken drumsticks. Poach for 5 minutes then drain and rinse with cold water.

  • Making the sauce mixture:

    • In a bowl mix:

      • water, soy sauce, brown sugar, gochujang, and garlic together

  • In a separate large pot ( this will be your main pot for cooking - we used a 6-quart dutch oven), add the chicken you just poached and sauce mixture. Bring it to a boil then lower to medium heat cooking for 10 minutes on a low simmer.

  • Add the yellow onion, potatoes, and carrots and continue simmering with the lid on for 20 minutes or until the chicken is cooked through and veggies are soft. Then mix in the sesame oil. And then you're done!

  • Grab a bowl, scoop some rice and garnish it with green onions! Enjoy!
