Chinese Tomato Egg Stir Fry

When I think of comfort food, I have a few dishes that come to mind and this is definitely one of them! Growing up in a Chinese household, my grandma would make this Chinese Tomato Egg Stir Fry for us and it was always so comforting and satisfying to eat! This home-cooked comfort dish is extremely easy and quick to make and I'm so excited to share it with you!


Recipe

ingredients

1 lb of Tomatoes ( I used Pearl Tomatoes)

7 eggs

3 thick slices of ginger

2 teaspoons of sugar

1 teaspoon of salt

1/2 teaspoon of white ground pepper

2 teaspoons of vegetable oil

prep work + cooking instructions

  • Cut the tomatoes into small wedges

  • Crack and beat the eggs

  • Heat up a WOK or saucepan over medium heat with vegetable oil

  • Cook the eggs until they are scrambled (be careful not to over scramble, you want big pieces of eggs) then set aside on a plate

  • In the same WOK or saucepan over low medium heat, add a little bit more of vegetable oil then add your tomatoes and ginger

  • Cook tomatoes until they are soft and juices are starting to come out for about 3 minutes

  • Combine the eggs with the tomatoes and season with salt, sugar, and pepper to taste ( it should be a little tangy but overall sweet)

  • Cook for another minute then you're ready to eat, serve with a bowl of white rice!
