Chinese Tomato Egg Stir Fry
When I think of comfort food, I have a few dishes that come to mind and this is definitely one of them! Growing up in a Chinese household, my grandma would make this Chinese Tomato Egg Stir Fry for us and it was always so comforting and satisfying to eat! This home-cooked comfort dish is extremely easy and quick to make and I'm so excited to share it with you!
Recipe
ingredients
1 lb of Tomatoes ( I used Pearl Tomatoes)
7 eggs
3 thick slices of ginger
2 teaspoons of sugar
1 teaspoon of salt
1/2 teaspoon of white ground pepper
2 teaspoons of vegetable oil
prep work + cooking instructions
Cut the tomatoes into small wedges
Crack and beat the eggs
Heat up a WOK or saucepan over medium heat with vegetable oil
Cook the eggs until they are scrambled (be careful not to over scramble, you want big pieces of eggs) then set aside on a plate
In the same WOK or saucepan over low medium heat, add a little bit more of vegetable oil then add your tomatoes and ginger
Cook tomatoes until they are soft and juices are starting to come out for about 3 minutes
Combine the eggs with the tomatoes and season with salt, sugar, and pepper to taste ( it should be a little tangy but overall sweet)
Cook for another minute then you're ready to eat, serve with a bowl of white rice!
